Soddisfatta!!!!
Devo dire che questa pasta ripiena mi ha soddisfatta. Ho fatto un figurone il giorno di Pasqua. La ricetta della pasta l'ho presa dalla bravissima Federica. Per il ripieno ho invece usato salmone e ricotta.

Per la pasta
300 gr farina 0
3 tuorli
1 uovo intero
una bustina di nero di seppia
2 cucchiai olio extra vergine d'oliva
acqua fredda se serve
Per il ripieno:300 gr farina 0
3 tuorli
1 uovo intero
una bustina di nero di seppia
2 cucchiai olio extra vergine d'oliva
acqua fredda se serve
200 gr di Salmone affumicato
300 gr di ricotta fresca ben scolata.
Per il sugo:
3 zucchine verdi.
1 cipolla bianca o scalogno
olio evo
500ml panna fresca
Preparazione
La sera prima ho impastato tutti gli ingredienti della pasta poi l'ho divisa in due parti ed in una ho messo il nero di seppia "ma con i guanti" ed ho impastato bene, ho lasciato riposare l'impasto chiuso in una pellicola per un'ora in frigo poi ho tirato le paste molto sottile e tagliato con il taglia biscotti a cerchi smerlati.
Mentre la pasta riposava in frigo ho frullato la ricotta con il salmone.
Ho poi messo un cucchiaino di ripieno in mezzo ad un dischetto e coperto con un dischetto dell'altro colore.
Per il sugo ho grattato la buccia delle zucchine, le ho tagliate a cubetti molto piccoli, ho fatto soffriggere con la cipolla tagliata molto sottile e una volta cotto ho messo la panna.
